Sushi Ice Cream Cupcakes!

Posted by Unknown at 4:01 PM 0 comments

Sushi cupcakes -- so cute! Available during the month of June only (so hurry!) from Marble Slab Creamery and MaggieMoo’s Ice Cream and Treatery. Topped with coconut flakes “rice” and gummy candy to look (mostly) like sushi rolls. Made with a yellow cake base and (either chocolate or vanilla) ice cream, topped with a dab of frosting, coconut flakes and gummy candies.

Price: $8.99 for 4 pack and $12.99 for 6 pack. I had a dozen gifted to me from the company (thanks guys!) and we plowed through them in two hours flat. And then we wanted more. The hazy, hot and humid days of NYC's summer beg for treats like these.

Beware, though, they are messy -- the coconut flakes get everywhere, the ice cream melts fast in the heat (even the heat of your hands) and the frozen gummy worm on top could snap a tooth, but the joy of biting through the ice cream cupcake and tasting all the flavors in your mouth together is a pretty wonderful experience. Like an extra-awesome ice cream cake slice. I slightly preferred the vanilla sweet-cream ice cream flavor but the chocolate was also yummy. These are perfect for a kid's party, or after-dinner treats for kids and grownups who feel like kids. Delicious!

My Baking Addiction has done it yet again. These Coconut Mocha cupcakes were actually inspired by an upcoming addition to the K-Cup (Keurig) line, The Original Donut Shop Coconut Mocha. There's even a Starbucks drink by the same name! It seems that everyone is jumping on this creative flavor combination bandwagon! You can make these cupcakes yourself by following the recipe here!

Coconut Tres Leches Cupcakes

No, you're not misreading the title of this post. I said Coconut. Tres. Leches. Cupcakes. It sounds too decadently amazing to be true. But alas, here it is. This sinfully delectable recipe was created by the mad geniuses at How Sweet It Is!

Is your mouth watering as much as mine is from this picture? I feel an overwhelming need to try this recipe ASAP. With Spring on it's way out and Summer fast approaching this would be the perfect treat to ring in the hotter weather! Check out the recipe here!

Does a no bake cupcake count as a cupcake?

Posted by Unknown at 6:42 AM 0 comments
That was my first thought when I saw this post at The Kitchn with photos and the recipe for no bake lemon cream and coconut icebox cupcakes. They are adorable and look super fun but what do you think? Do cupcakes require baking? Can these desserts lay claim to the title of "cupcake" or should they be called something else? (Note: I only mean this query half seriously, and we do occasionally post non-cupcake items that look cupcakes, but I really am curious, but by no means wish to discourage you from making them. I like all the things involved with them, including lemon cream, coconut and Nilla wafers!) Also, from the post: "Use the lemon cream as the base, but if you don't like coconut, for instance, you could sprinkle these with chopped candied lemon peel or white chocolate shavings instead. Or double up on the lemon and drizzle them with warmed lemon curd!" Also, I love lemon curd. Like would eat it straight out of the jar love it.
